Valentine’s Day Blondie Bars

Time for another #CCRecipe! If I had all the time in the world, I’d have a new recipe up for y’all every single week. For now, we’ll have to be happy about a new recipe every month or so! Baking treats for my friends and family is something that brings me such joy – there’s nothing like putting a smile on someone’s face with something you made yourself! Today I’m going to share a super easy blondie recipe with you so you can show your love ones how much they mean to you.

These bars would be super cute packed up in a little box like these ones I used for my Christmas cookies, or pile them all up on a fun Valentine’s Day plate! If you haven’t checked it out yet, I also have an easy 4-ingredient Valentine’s Day peanut butter cookie recipe on the blog as well as a gift guide for her and a gift guide for him.

WHAT YOU NEED:

1 ½ cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1 cup packed light brown sugar

1/2 cup granulated sugar

12 tablespoons salted butter, melted and cooled

2 large eggs

1 ½ teaspoons vanilla extract

1 cup Valentine’s M&M’s

1/2 cup mini heart sprinkles

WHAT TO DO:
  1. Preheat oven to 350°F and line a 9×13 baking pan with parchment paper, all the way up the sides.
  2. Melt butter in a microwave safe bowl.
  3. In a mixing bowl fitted with a paddle attachment, combine the melted butter, brown sugar and sugar. Then add the eggs and vanilla. Gently fold in the flour, baking powder and salt, then fold in the M&M’s and sprinkles.
  4. Spread batter into the lined baking dish and smooth the top (it will be very thick!) Sprinkle more sprinkles and M&M’s on top. Bake for 20-25 minutes or until lightly golden on top. The middle will still be a little gooey when you take them out of the oven, but they will set as they cool. Don’t over-bake or they will be dry! Remove from oven and let cool completely before cutting into squares.
