Pumpkin Chocolate Chip Muffins

Sure, the official start to the fall means wearing sweaters, picking apples, and PSL’s, (or pumpkin cream cold brews, if you’re me) but the number one thing I love about the fall is BAKING! Sharing new recipes with y’all is such a fun part of running this blog. I decided to try my hand at pumpkin chocolate chip muffins yesterday, and I love how they turned out!

 

They are FULL of fall spices which makes your space smell like all the good things while they’re baking. They’re also perfect for house guests, taking to a friend, or for enjoying yourself! ? WHAT YOU NEED:
  • 1 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon apple pie spice
  • 1/2 teaspoon allspice
  • 1/2  teaspoon nutmeg
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 3/4 cup pumpkin puree
  • 1/3 cup canola oil
  • 1/4 cup milk (I used almond milk)
  • 2 tablespoons molasses
  • 1 tablespoon vanilla extract
  • 1 cup mini chocolate chips, plus extra for sprinkling
WHAT TO DO:
  1. Preheat your oven to 400℉.
  2. Grease and flour a 12 muffin baking pan.
  3. Mix the flour, baking powder, spices, and salt in a medium mixing bowl and set aside.
  4. Mix the remaining ingredients (minus the chocolate chips) in a separate small mixing bowl.
  5. Stir the wet ingredients into the dry ingredients until JUST combined.
  6. Gently fold in the mini chocolate chips.
  7. Fill each muffin cup 3/4 full – the batter should make exactly 12 muffins!
  8. Bake the muffins for approximately 15 minutes, checking them for doneness after the first 10.
  9. Cool, and enjoy! 🙂
