Farmer’s Market Finds

Happy Memorial Day!! Hope that you are enjoying your day off (and shopping some online sales!) – we’re making BBQ in the crockpot because #alberto. I am so thankful for all of the men and women who serve our country + fight for our freedom so that we can enjoy days like today!
One of my favorite things about this time of the year (when there isn’t a downpour) is going to farmer’s markets! There’s just something about eating local fruits and vegetables that makes it feel like summertime is finally here. I typically go to the South Carolina state farmer’s market when I’m in Columbia, but had the chance to go to the Western North Carolina farmer’s market with Rudd this past weekend! I thought it would be fun to share some of my favorite things to make with fresh produce in the summertime. Scroll down for recipe ideas to help you get started at your own market!

FARMER’S MARKET FOR BREAKFAST

My mom makes a recipe called Savory Summer Pie and it’s one of our favorite breakfast/brunch things to make!! This Farmers’ Market Quiche from savingdessert.com is super similar and adds in some extra veggies!
“As the Farmers’ Market starts filling up with spring vegetables, plants, flowers and herbs, keep this delicious quiche in mind.  The recipe is easily adapted to your family’s favorite vegetables but I think asparagus would be wonderful along with thin sliced potatoes, or a little sugar glazed ham or smokey bacon.  I really don’t think you can mess this up … just use whatever is fresh and available and I am sure everyone will love your Farmers’ Market Quiche!”

FARMER’S MARKET FOR SNACK

Homemade salsa from kimshealthyeats.com! You can’t go wrong with a whole bunch of vine-ripened tomatoes from your farmers’ market.
“You can make it as chunky or as smooth as you want. I pulse mine in the food processor for a smoother texture. You can also adjust the heat by adding more or less jalapeño.”

FARMER’S MARKET FOR DESSERT

One of my favorite flavor combos EVER is strawberry/rhubarb and I also happen to be a crisp lover. This skillet strawberry rhubarb crisp from flavorthemoments.com also gets 10pts from me for giving me another reason to use my cast iron!!
