Apple Fritter Bread

Back with another fall recipe! After we picked up a half bushel of Granny Smith Apples at one of the local orchards in Hendersonville, NC a few weeks ago, I’ve been dreaming up ways to use them all! I’ve already made an apple crisp *twice* (I have that easy recipe saved on my Instagram story highlights!) and now I’ve moved on to this yummy apple fritter bread.

 

This is also such an easy recipe, and it really is a crowd pleaser. I’ve served this for dessert, as well as for breakfast at our house! In fact, tropical storm Zeta came right through western North Carolina this morning, so Rudd and I hunkered down and had a slice of this bread + sausage biscuits for breakfast. I can’t think of a better start to my Thursday!

Apple Fritter Bread

APPLE FRITTER BREAD
INGREDIENTS:

Bread:

  • 1/2 cup butter
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk

Apple Mixture:

  • 2 large apples, chopped (Granny Smith preferred – I don’t peel mine, but you could if you want!) mixed with 2 tablespoons sugar and 1 teaspoon cinnamon.

Cinnamon-Sugar Mixture:

  • 1/3 cup granulated sugar
  • 2 teaspoons cinnamon

Glaze:

  • 1 cup powdered sugar
  • 3 tablespoons of milk (or more to reach desired consistency)

 

WHAT TO DO:
  1. Preheat oven to 350 degrees. Spray the inside of a loaf pan with non-stick cooking spray.
  2. For the bread, beat the butter and sugar in the bowl of an electric mixer, then add eggs and vanilla.
  3. Slowly mix in the flour and baking powder on a low speed until combined.
  4. Add the milk, and mix until just combined. Do not over-mix!
  5. In a separate bowl combine the chopped apples, sugar, and cinnamon to create the apple mixture.
  6. In another small bowl, combine the sugar and cinnamon to create the cinnamon-sugar mixture.
  7. Spread half of the bread batter in the bottom the prepared pan, and top with half of the apple mixture, then top with half of the cinnamon sugar mixture.
  8. Repeat with the second half of the bread batter, then the remainder of the apple and cinnamon-sugar mixtures.
  9. Bake for 1 hour, or until an a toothpick inserted into the bread comes out clean.
  10. Remove the bread from the oven and let it cool completely before removing from the pan.
  11. Mix the powdered sugar with the milk for the glaze, and drizzle on top of the loaf. Slice, and enjoy!
