How to Eat More Greens

Since I’ve been home for the past week, I’ve been trying to eat really healthily to detox my body from the last 4 years of college (lol!) No more late night eating or going days without eating a green vegetable! Sometimes I really love eating salads, but most days a bowl of cold leafy greens makes me not want to eat anything at all. I think it’s a fun challenge to try to sneak in vegetables where you can, in a way that you actually enjoy!

1. Green Juices
It’s so convenient that most “healthy” grocery stores like Earth Fare and Whole Foods have little juice bars in their stores! Whenever I’m shopping, I love to grab a green juice with apple, celery, lemon, and spinach to sip on while I browse around the store. It’s an easy way to mindlessly get in some veggie vitamins. The options are endless!

2. Green Smoothies
So if you need a little more substance (maybe a breakfast or a mid-morning snack), green smoothies are just the best. This is probably my favorite way to get my greens in! 3. Omelettes
Eggs are always my go-to breakfast and it’s soooo easy to sneak in your greens here. Just put a handful in your morning omelette or scrambled eggs with a sprinkle of cheese and wait for it to wilt down! Add a little salt + pepper and you’ve got yourself a serving of veggies. Try this Skinny Greek Omelette!

4. Stir Fry
Whether you’re making an Asian, Mexican, or other version of stir-fry, it’s a great way to add in some extra veggies for lunch or dinner. Just throw a few handfuls of whatever greens you have on hand into the mix! One of my favorites is this Shrimp & Spicy Kale Sweet Potato Stir Fry.
